Cornish Saffron Buns are a delicious traditional treat hailing from the southwestern county of Cornwall, England. These buns are made using saffron, a spice derived from the Crocus flower that imparts a beautiful golden color and a distinct flavor to the buns. Cornish Saffron buns


Ingredients:

  • 500g plain flour

  • 1 tsp salt

  • 1 tsp dried yeast

  • 50g caster sugar

  • 100g unsalted butter, cut into small pieces

  • 1 large egg

  • 250ml warm milk

  • 1/2 tsp Meris saffron threads

  • 50g currants

  • 50g mixed peel

  • 1 beaten egg (for glazing)




Instructions:

  1. Preheat your oven to 200°C (180°C fan)/Gas Mark 6.

  2. In a small bowl, soak the saffron threads in a couple of tablespoons of warm milk. Set aside.

  3. In a large mixing bowl, combine the flour, salt, dried yeast and caster sugar.

  4. Rub in the unsalted butter until the mixture resembles breadcrumbs.

  5. Beat the egg and add it to the bowl.

  6. Add the saffron-infused milk and the remaining warm milk to the bowl and stir well.

  7. Add the currants and mixed peel and mix until evenly distributed.

  8. Knead the mixture on a floured surface for about 10 minutes until the dough is smooth and elastic.

  9. Place the dough in a greased bowl and cover with a clean tea towel. Leave to rise in a warm place for about an hour or until doubled in size.

  10. Knock back the dough and divide it into 12 equal pieces.

  11. Roll each piece into a ball and place them on a greased baking tray, leaving plenty of space between each bun.

  12. Cover with the tea towel again and leave to rise for another 30 minutes.

  13. Brush each bun with beaten egg and bake in the preheated oven for 12-15 minutes or until golden brown.

  14. Once the buns are cooked, remove from the oven and allow them to cool on a wire rack.

  15. Serve the Cornish Saffron Buns warm with plenty of butter and a hot cup of tea.
