Ingredients:

  • 2 cups all-purpose flour

  • 1/2 tsp Meris saffron threads

  • 1/2 cup milk

  • 1/4 cup unsalted butter, softened

  • 1 large egg, beaten

  • 1/4 cup raisins

  • Pearl sugar or coarse sugar for sprinkling





Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, salt, cardamom, and saffron threads.

  2. In a small saucepan, heat the milk until just simmering. Remove from heat and add the butter. Let the butter melt and stir until fully combined.

  3. Add the milk mixture and beaten egg to the dry ingredients. Mix until the dough comes together.

  4. Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.

  5. Place the dough in a lightly oiled bowl and cover with a towel. Let it rest in a warm place for 1 hour, or until doubled in size.

  6. Preheat your oven to 400°F and line a baking sheet with parchment paper.

  7. Divide the dough into 12 equal pieces and roll them into long ropes, about 8-10 inches each.

  8. Shape the ropes into an "S" shape and place them on the baking sheet. Tuck a few raisins into the curves of each "S".

  9. Let the buns rest for an additional 15-20 minutes.

  10. Brush the buns with beaten egg and sprinkle with pearl or coarse sugar.

  11. Bake for 10-12 minutes, until golden brown.
