  2. In a separate saucepan, heat the remaining broth over low heat and keep it warm.

  3. In a large heavy-bottomed pot, melt the butter over medium heat.

  4. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

  5. Add the Arborio rice and stir to coat with the butter, onion, and garlic mixture. Cook for 2-3 minutes, stirring frequently.

  6. Add the white wine and cook, stirring constantly, until it is absorbed by the rice.

  7. Add a ladleful of the warm broth to the rice mixture and stir until it is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly, and allowing each addition to be absorbed before adding the next. This process should take about 20-25 minutes.

  8. When the rice is tender but still firm to the bite, stir in the saffron and its liquid.

  9. Remove the pot from the heat and stir in the Parmesan cheese.

  10. Season with salt and pepper to taste.

  11. Let the risotto sit for 2-3 minutes before serving.

  12. Optional: Garnish with chopped fresh parsley and extra grated Parmesan cheese.
