saffron tahchin

Ingredients:

  • 2 cups basmati rice

  • 500g boneless chicken, cut into pieces

  • 1 onion, finely chopped

  • 3 tablespoons vegetable oil

  • 1 teaspoon ground saffron, dissolved in 2 tablespoons of hot water

  • 1 teaspoon ground cumin

  • 1 teaspoon ground cardamom

  • 1 teaspoon turmeric

  • Salt and pepper to taste

  • 1 cup plain yogurt

  • 1 tablespoon butter, melted

  • 2 tablespoons slivered almonds (optional, for garnish)

Instructions:

  1. Prepare the Rice:

    • Rinse the basmati rice under cold water until the water runs clear.

    • Soak the rice in water for 30 minutes, then drain.

    • In a large pot, bring water to a boil and add salt.

    • Cook the rice in boiling water for about 5-7 minutes until it is partially cooked. Drain the rice and set aside.

  1. Sauté the Chicken:

    • In a separate pan, heat vegetable oil over medium heat.

    • Add the chopped onion and sauté until golden brown.

    • Add the chicken pieces and cook until they are lightly browned.

    • Season with cumin, cardamom, turmeric, salt, and pepper. Stir well to coat the chicken with the spices. Cook for a few more minutes until the chicken is fully cooked. Set aside.

  1. Prepare the Saffron Yogurt Mixture:

    • In a bowl, combine the dissolved saffron with plain yogurt. Mix well until the saffron color is evenly distributed.

  1. Layering the Tahchin:

    • In a large non-stick pot or oven-safe dish, brush the bottom and sides with melted butter.

    • Place a layer of partially cooked rice at the bottom of the pot.

    • Spread a layer of saffron yogurt mixture over the rice.

    • Add a layer of cooked chicken on top of the yogurt mixture.

    • Repeat the layers of rice, saffron yogurt, and chicken until all the ingredients are used. The top layer should be rice.

  1. Cooking the Tahchin:

    • Cover the pot tightly with a lid or aluminum foil to trap the steam.

    • Place the pot in the oven and bake at 180°C (350°F) for about 45 minutes to 1 hour, or until the rice is fully cooked and a golden crust forms at the bottom.

  1. Serving the Saffron Tahchin:

    • Allow the tahchin to cool for a few minutes before inverting it onto a serving platter.

    • Garnish with slivered almonds for an added crunch and visual appeal.

    • Cut into wedges and serve hot, accompanied by a side of salad or yogurt sauce.
